You've heard of snickerdoodles, golden doodles, labradoodles and now it's time you're introduced to appledoodles. This new take on the classic snickerdoodle recipe will have you wondering why we didn't think to combine these two sooner. These cookies pair perfectly with hot tea or cider, a fireplace and a book.
Appledoodle Cookies
Ingredients:
1 1/2 cup apples, peeled and diced
1/2 cup butter flavored shortening
1/2 cup butter at room temperature
1 1/2 cup sugar
2 eggs
1 tablespoon vanilla extract
2 teaspoons cream of tartar
2 3/4 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
3 tablespoons sugar
1 1/2 teaspoons cinnamon
1 1/2 teaspoons pumpkin pie spice
Directions:
Preheat oven to 400 degrees
Cream together butter, shortening and sugar
Add in eggs and vanilla
In a separate bowl, sift together flour, cream of tartar, baking soda, salt and pumpkin pie spice
Slowly add flour mixture to wet mixture and mix until fully combined
Remove from mixer and fold in apples
In a small bowl, mix together sugar, cinnamon and pumpkin pie spice
Form dough into 1 inch balls and roll in sugar mixture
Place on baking sheet lined with parchment paper
Bake for 8-10 minutes
