12 Cookies of Christmas: Day 2

This is a favorite recipe that was handed down from my Nana.  When I was little, she would make these cookies and I would eat them by the handful.  Since the cookies are so small, you can eat a couple without feeling too guilty! ;)


Pecan Wedding Cookies

Ingredients:
1 cup butter, room temperature
4 tablespoons sugar
2 teaspoons vanilla
2 1/2 cups flour, sifted
1 to 1 1/2 cups pecans, finely chopped (depending on preference)
Powdered sugar for rolling

Directions:
Preheat oven to 275 degrees
Cream butter, sugar and vanilla
Slowly add flour and chopped pecans
Form into balls, place on greased cookie sheet or cookie sheet with parchment paper
Bake for 45 minutes
Roll in powdered sugar while cookies are still warm (I like to roll them twice!)
