12 Cookies of Christmas: Day 8

We need to set some ground rules before we get to the recipe.  Spritz cookies are high-maintenance cookies.  They must be put on a chilled, ungreased baking sheet. Even though the cookie sheet needs to be chilled, the dough can't.

Spritz Cookies

Ingredients:

3 1/2 cups flour, sifted

1 teaspoon baking powder

1 1/2 cups butter, softened

1 cup granulated sugar

1 egg

2 tablespoons milk

2 teaspoons almond extract

Sprinkles (optional)

Food coloring (optional)

Directions:

Preheat oven to 350 degrees

With an electric mix, beat butter and sugar until light and fluffy

Add egg and beat well

Mix in vanilla, milk and almond extract

Slowly add in flour and baking powder until well combined

Mix in food coloring (optional)

Fill cookie press with dough and desired disk

Press onto chilled, ungreased cookie sheet

If you want, top with sprinkles before baking

Bake for 8-10 minutes

Cool for 2 minutes on sheet before transferring to wire rack to cool
